THE PERFECT CHEWY MELT-IN-THE-MIDDLE NUTELLA COOKIE RECIPE (VEGAN TOO!)

The title of this post alone is enough to make me salivate at my desk, but after eating many variations of this cookie I can confirm they are the best bake ever to come out my oven, and am also enjoying said cookie whilst writing this so it's a win-win situation all-round for content.

I'm always on the hunt for vegan treats that a) don't contain too many overly-complex ingredients that just make it a faff to bake and b) actually taste okay - there's only so many date bars I can consume before wanting a whole car of dark chocolate, and after many cookie batches and recipe testing sessions I've nailed the chewy but also gooey texture we all dream about.

This is a slight mod of my previous cookie recipe, which are also v delicious but not as chewy so if you want ultimate chew plus melt-in-the-middle goodness, get whipping up a batch of these...




Recipe - makes 4 extremely large cookies, or at least 8 normal ones for normal people

200g coconut sugar
125g dairy-free butter
1.5 tbsp nut butter
180g rice flour
1/2 tsp baking powder
1 tsp per cookie (or more if you feel it, no judging) of Mr Organic Chocolate Hazelnut Dairy Free Spread




1. Measure out all your ingredients - it saves both time and washing up. I would suggest measuring your butter straight into the mixing bowl, as it's the first ingredient you'll need and means one less buttery bowl to wash!

2. Cream together your butter and sugar on a high speed so it's whipped into a frenzy and almost looks like air. The softer, the better.

3. Add in your generous tablespoon and a half of nut butter - I like almond as it's flavourless but you can use any flavour you like! - and again whip it into a frenzy.

4. Add a few spoonfuls of flour and measured baking powder at a time to the mix whilst on a medium speed, until it starts to look thicker but still quite squishy. Whilst you do this, pre-heat your oven to 200 degrees celsius.

5. Line a tray with greaseproof paper, and dollop (technical term) equal small amounts of mixture on the tray as a base for the filling (I tend to use half a tablespoon). Slightly flatten the mixture and make a bowl in the centre for the spread.

6. Take a teaspoon of hazelnut spread and fill the centre of the cookie, spreading as evenly as you can; then take another half tablespoon of cookie mixture and layer on top, using the back of a spoon or your finger to seal and smooth out the seam between bottom and top. Again, flatten slightly so a there's no mound when baking, and repeat.

7. Now here's where the science comes in - you want it to cook fast at the beginning so it melts/the edges set but then slow it down so it stays chewy. I suggest 5 minutes on 190 degrees to get that cookie forming and melting, and then drop it to 155 degrees for 7 minutes so it slowly melts and becomes gooey. I'd even suggest turning the oven off for the last minute or two so it cooks in residual heat and begins to cool. Remove from the oven and pop onto a cold tray immediately so they begin to set.

8. Now just wait 10 mins and it'll be the perfect temperature - warm and gooey (almost breaking) in the middle and sugary chew on the edges, GLORIOUS!




Perfect for any day of the week (but especially a Sunday bake for a week's worth of treats) and you can also freeze or chill remaining mixture which is great when you need cookies ASAP! Now let's get baking!

INDEPENDENT SHOPS AND VEGAN CAFES TO VISIT IN EDINBURGH

36 hours in a beautiful city is quite the whirlwind, but luckily it gives you a chance to find the best places for endless hot chocolates after walking up and down the cobbled hills of Edinburgh for hours - a true indulgence that I'm all for come winter - and discover some fabulous shops to peruse whilst they digest.

If you're planning a trip to Edinburgh, then here's 5 places (mainly cafes) you have to make time for on your next visit...


Artisan Roast
I popped in here quickly for a cuppa to warm my chilly bones but the coffee here is truly delicious - well, at least the smell of it is! All brewed locally and including special in-house blends, Artisan Roast has sourced sustainable ingredients and provides fairtrade opportunities for growers which makes every coffee taste a bit better IMO. You can also buy online here.





Curiouser and Curiouser
If you're a fab of cute stationery (always), prints (yes), and unique homewares (sign me up), then you need to head to Curiouser and Curiouser - there are two stores, one located on Broughton Street and another in Bruntsfield Place, stocking gorgeous prints from Rifle Paper Co. and Papier Press, to in-house designed lampshades and British-made jewellery, plus some yummy Coco Chocolatier bars which are DELISH.







Fortitude Coffee
If you're looking for a quiet spot a few minutes walk from the main bustle of shops, then Fortitude Coffee is a fabulous place to wind down - small yet warm and cosy, it's like a quite bubble within a busy city where you can enjoy a frothy oat hot chocolate or locally made soup with a book, and let time pass by one mug after another. You can also buy their coffee here.




Hendersons
The OG vegetarian and vegan restaurant of Edinburgh, Hendersons has four locations across the city including a deli and dedicated restaurant with some truly yummy delights. From fancy smashed avocado, to vegan pancakes doused in syrup, you can pick up some fabulous healthy snacks in the deli or dine on 3-courses in the restaurant on Thistle Street, and I will say the avocado bagel is truly delish!








Burr and Co.
Tucked inside the Principle Hotel, Burr and Co. is a luxurious cafe to spend hours relaxing in, sinking into comfy chairs and refilling cups of coffee and hot chocolate whilst you have a moment spare after all the shopping. Burr and Co. stocks the fabulous Coco Chocolatier hot chocolate (I recommend the cinnamon and chilli one), has lots of lovely sweet treats and sandwiches, plus some tasty seasonal options like tumeric latte and winter salad - basically, go to Edinburgh for all the hot chocolate and coffee, you won't regret it.

THE BEST HOT CHOCOLATE YOU'LL EVER MAKE

I'm currently on a liquid cleanse, clearing my system for the festive season and getting my mind, body, and spirit in alignment before the new year, refreshing my digestive system and getting in those essential nutrients we all need.

Did I mention the liquid was hot chocolate? Yeah there's lots of hot chocolate.

I've been on the one-a-day method, mainly because my current concoction is so rich and velvety I can't stomach more than one but it is a glorious one-mug-a-day that I highly recommend everyone tries.

After last year's post I thought I'd update you all on my new and improved high quality chocolate recipe, which is perfect for vegans and also those who want something extra luxurious now and again...




You will need your favourite mug, some Oatly chocolate milk (or milk of your choice, but chocolate milk makes it extra yummmmy), 2 Tbsp of Hot Chocolate powder (I use 1 Tbsp of Green and Blacks and 1 Tbsp of Cadburys), either some syrup or spice - I've been adding 1/2 tsp of Chai Latte powder and wow.

Take your fave mug and measure out the amount of milk you want, and then heat in a pan on a medium heat until warmed through (just hotter than drinking temperature so it lasts).

In your mug add the powders, and when the milk is hot add a few teaspoons to mix in and make a paste. You can either empty the paste into the pan to mix thoroughly or pour the warm milk straight into your mug, and et voila it's all complete!

Using chocolate milk honestly takes drinks to another level, making it easier to quickly whip up a sweet treat and cuts out a lot of the fuss when mixing powders (says the gal who used 3 chocolate powders in one mug) and it just tastes SO MUCH BETTER - I do think using Oatly Barista makes a difference as it makes the milk frothy and light, so I might try mixing the two milks together new time *goes all heart eyes* (also yes rating milk is my new thing I am old)

Now I think it's time for my daily dose of hot chocolate to keep my cleanse on track - is there a better way to start a Monday?

VEGAN CHAI LATTE CUPCAKES

It's that time of year where I want spiced everything - drinks, candles, baths, food - but especially baked goods.

Cakes.

Biscuits.

Cookies.

The lot.

I have to be quite restraint this time of year as I'm not bothered about Hallowe'en or Thanksgiving, but I'm all ready for Christmas and the festive spirit, so buying or making anything too festive has to be done at a slow inclination so not to alarm anyone that it's 9 weeks until the big C. Yep, it'll soon be see ya later 2017, did you even happen?

Back to the baking though, and something I discovered only recently is Chai Latte and boy has my world opened up! Gone are the days of just settling for tea or hot chocolate, there is a warm milky between I've been looking for! (I promise it's not as gross as it sounds)

Now potentially my favourite drink, I've made it into one of my favourite bakes with this Chai Latte infusion - it's moist (soz), spicy, and with the added chai buttercream, a yummy sweet treat that's a great accompaniment to an evening movie.



Ingredients:

For the cupcakes:
400g self-raising flour
1 1/4 tsp bicarbonate of soda
250g caster sugar
115ml sunflower oil
400ml dairy-free milk
3 tbsp golden sugar
3 tbsp Chai Latte powder

For the icing:
200g butter
165g sifted icing sugar
10g Chai Latte powder



1. Pre-heat the oven to 180Âșc and line your cupcake tray. Sift the flour, bicarbonate of soda, chai latte powder and sugar into a mixing bowl and combine. In a separate jug, whisk together the oil, milk, and syrup, before pouring into the dry mix and whisking until creamy and combined.

2. Spoon equal amounts into the cupcake cases, and cook for 10-15 minutes until risen and golden. Whilst they bake, mix together the icing sugar, butter and chai latte powder and put aside to set so it's easier to pipe!

3. Once the cupcakes are out and cooled, either spoon or take a plastic bag to pipe out a nice icing top, and finish with a dusting of cinnamon or chai.



Easy peasy, nice-y spicy, what better treat to whip up on a Monday ey?
